Indian Newries

This sweet treat is a favorite during the Christmas season in India.

Ingredients

Dough

41/2 cups flour

3 T. butter (ghee)

1/1/2 cups milk

Filling

1 ¾ cup semolina flour (coarse rice or wheat flour)

7/8 cup sugar

¼ cup raisins

¼ cup chopped cashews

3 cardamons

1 t. cinnamon

1 T. butter (ghee)

Combine flour, butter and milk into a stiff dough.

Refrigerate.

Gently cook raisins and nuts in a small amount of butter and set aside.

Use rest of butter to gently fry semolina until light brown.

Add sugar and spices, add raisins and nuts. Mix.

Roll out small pieces of dough into 2 inch rounds.

Place a T. of filling in the middle, fold and seal the edges of the dough.

Heat oil and fry until golden brown.
