Cooking Step by Step Recipe: Pizza Muffins (pages 44-45)
These easy, cheesy treats are a tasty twist on pizza. They’re great on their own, but even better with a yummy dipping sauce.

1 ¼ cups all-purpose flour
1 tsp baking powder
1 tsp dried oregano
8 tbsp butter, melted
1 cup milk
2 tbsp pizza sauce, plus extra for dipping
4 oz (115g) mixed Cheddar and mozzarella cheese, grated
5 ½ oz (150g) mini pepperoni, sliced
1. Preheat the oven to 375°F (190°C) and grease a muffin pan with oil.
2. Mix the flour, baking powder, and oregano in a bowl, and the butter, milk, eggs, and pizza sauce in a liquid measuring cup.
3. Pour the egg mixture into the flour mixture and lightly stir together. Then, fold in the cheese and pepperoni.
4. Spoon the mixture into the muffin pan and bake for 20-25 minutes until golden.
Only fill the cups ¾ of the way or the mix will spill out.
